    Hi there, actually your savory crêpe is kind of a galette bretonne, but you should put the very fresh RAW egg on top of it, without turning the glatette over. Preferably add cheese and ham, fold it without turning it. This would be a "galette complète" (some would add onions).

    French crêpes are usually enjoyed thinner than this (in this case adding more of the 2/3 water 1/3 milk mixture should do the trick), the batter is such a consistency that is similar to almost milk (but a bit thicker) and it creates a small thin crispy crust/perimeter on the sides (key to a good french crêpe I'd say). There can also be some extra ingredients added to the batter but that's a secret I cannot reveal unfortunately. I'd advise rhum or vanilla for deeper flavor, especially in crêpe suzette! :DD Hope it helps! The galettes ((buckwheat crêpes)) traditionally actually are not prepared with milk or butter (or even eggs), they are prepared with just: water, salt and sarasin ((buckwheat)) flour. The flour is first mixed with a bit of water and salt to form a thick paste and let sit for a few hours, then the rest of the water is added... again, a thin consistency is key. However, I think the butter is always a good idea and makes it taste better, same for milk..? you can even replace a bit or the sarasin flour with normal flour for a lighter taste, so yeah! Honestly, those buckwheat crêpe are looking DELICIOUS though! //reference: being a french person with a traditional passed on crêpe recipe + a good sum of experiences during childhood and adulthood in eating french crêpes in France//

    You will never see a buckwheat crepe cooked like that in France : we would strangle the cook then bury his remains in a deep forest so that we forget this shame ! You first cook a batch of buckwheat crepes then cook them a second time (or else they will be soggy). You break the egg directly on the hot crepe while it's cooking, add some slices of ham and shredded emmental cheese around (this is the original Brittany recipe).
